Bottes de haricots verts avec bacon is what a fancy restaurant calls these, but at home they’re green bean bundles. This is the green vegetable for our holiday menu and we dress them up for the occasion. They taste wonderful and they look gorgeous!
The humble green bean is a favorite vegetable and something we have in common with the rest of humanity. The on-line ranking community thinks highly of it, but it can’t compete against the #1 potato, so we serve both.
Jack Spriggins famously used beans when he hatched his plan to recover the family’s golden goose. He traded the family cow for magic pole beans so he could climb above the clouds to the giant’s castle. Consider how this story would end if he had chosen green beans instead!
We tie these together with real bacon, adding flavor and color. With prime rib and luscious mashed potatoes they make a beautiful plate. We pretend it’s a healthy side, but honestly with the sugar, bacon and butter they might not qualify. Hey, it’s once a year. I call that moderation.
