Like the name suggests, 911 Noodles bring the heat—fiery, tongue-tingling heat that’s as intense as a five-alarm fire. If you’re like me and crave hot and spicy food, this bowl of noodles will hit the spot every time. Just thinking about them makes my mouth water… and that sounds like lunch.

The beauty of this dish is its flexibility. You can dial down the spice by reducing—or even skipping—the chili crisp entirely. Instead, try soy sauce, sesame oil, curry paste, fish sauce, harissa, or miso to build flavor without turning up the heat. It’s your bowl—season it your way.

Why the Rush?

Whether you’re short on time or just too tired to fuss with dinner, 911 Noodles are your rescue meal. From start to finish, they take about 5 minutes to boil, drain, and season, and probably no more than 5 minutes to devour. That’s a complete, satisfying meal in 10 minutes flat.

Let’s Make 911 Noodles

Choose your noodles carefully. Most grocery store options are fried, but I prefer air-dried for their clean flavor and toothsome, “al dente” bite. My favorite brand is A-SHA, a Taiwanese noodle maker and supplier to Momofuku. At under $3 per serving, they’re a delicious and affordable.

Next, the heat. Store-bought chili crisp is convenient, but it can be expensive—sometimes $13 for just a few ounces. I make my own for a fraction of the cost ($1–$2 per jar), and you can, too. Then, the seasoning and garnish. A splash of soy sauce adds instant umami. I usually keep it simple with a sprinkle of freshly sliced green onions, but when I’m feeling indulgent, I toss in sautéed or roasted mushrooms. You can add any veggie you like—raw or cooked. There is no wrong choice.

Ingredients

  • 1 pkg (96 grams) A-SHA flat, wavy air-dried wheat noodles
  • 11/2 TBL chili crisp – get the recipe HERE
  • 1 TBL barrel aged premium soy sauce
  • 1 green onion – sliced – garnish
  • 34 roasted chestnut mushrooms – optional

Instructions

  1. Boil the noodles per the producers instructions
  2. Turn off the burner and drain the noodles
  3. Add the soy sauce to the warm pot, transfer the noodles back to the pot, toss to coat the noodles
  4. Add the chili crisp to the noodles and toss to coat them equally
  5. Pour the noodles into a bowl and garnish with the green onion, mushrooms and a little more chili crisp on top
