There matcha was everywhere we turned, woven into bustling markets, showcased in refined restaurants, and featured at every tourist stop. It went far beyond tea ceremonies, finding its way into everything from creamy ice creams and frothy lattes to delicate cakes, cookies, and even savory dressings and sauces. One of my personal obsessions? Matcha Kit-Kat bars—I brought home more than I’d care to admit.

This cocktail channels that same sense of discovery. Earthy matcha meets a smooth, lightly sweet base, then lifts into something brighter with a cloud of lemon foam—adding a citrusy contrast that feels refreshing and refined. A dusting of crushed cinnamon candy finishes the drink, bringing warmth and a hint of spice that lingers just long enough to invite the next sip. Gin cocktail with matcha infused tea and syrup with oatmeal milk and lemon foam, garnished with crushed cinnamon candy

Ingredients

Matcha Simple Syrup

  • 1.5 cups granulated sugar
  • 1 cup water
  • 1 TBL ceremonial matcha powder

Lemon Foam

  • 2 TBL freshly squeezed lemon juice – strained to eliminate any pulp!
  • 2 oz simple syrup
  • 6 oz cold water
  • 2 egg whites

Matcha/Tumeric Tea

  • 1214 oz boiling water
  • 2 packets matcha/turmeric tea bags
  • 1/2 tsp ceremonial grade matcha powder

Matcha Made In Heaven Cocktail

  • 1.5 oz gin
  • 1/2 oz matcha simple syrup
  • 1 oz matcha/tumeric tea
  • 1 oz full fat oatmeal milk
  • Lemon Foam
  • Crushed cinnamon candy – garnish
  • Matcha Powder – optional garnish

Instructions

Matcha Simple Syrup

  1. Mix in saucepan over low heat until dissolved. Raise heat to a boil, then immediately lower heat to low simmer for 8-10 minutes. Cool and refrigerate

Lemon Foam

  1. Combine the juice syrup and water, then add the egg whites, whisking until thoroughly combined and you have a light foam. Pour into a whipper siphon and charge with N2O cartridge. Shake vigorously and lay on its side in the refrigerator until cold. Shake again before serving

Matcha/Turmeric Tea

  1. Place a half-teaspoon of matcha powder in a pint mason jar. When the water reaches a rolling boil, pour it over the powder. Screw on the top and shake to dissolve the matcha powder. Open the top and steep 2 tea bags for 5 minutes in the matcha tea, remove the bags, replace the top and shake again. Let cool and refrigerate

Matcha Made In Heaven Cocktail

  1. Pour the tea, oat milk, syrup and gin in a shaker and add ice
  2. Shake until ice cold and double strain into a coupe or double rocks glass
  3. Top with lemon foam and sprinkle with crushed cinnamon candy or matcha powder
