Champagne Wishes

Robin Leach signed off his groundbreaking show, Lifestyles of the Rich and Famous with “champagne wishes”. He led the way for the plethora of documentary series celebrating the luxury lifestyle of celebrities and sports figures. The good news is we can all enjoy this delicious sparkler without breaking the bank, perhaps leaving room for “caviar dreams”.

There’s nothing like a sparkling cocktail to make you feel special, and deservedly so. This one begins with a cognac base, sweetened with a sugar cube and tamed by a touch of bitters. Topped with brut champagne, it becomes a festive, beautiful and delicious sipper.

Alternate Versions

While the great stuff is certainly welcome if it fits the budget, it’s not required. In fact, you may want to save the high dollar stuff to enjoy by itself, because the cognac and bitters will change the nuanced flavor of that Dom or Krug. A good solid champagne, a sparkling white wine or prosecco will send you off to sleep dreaming of that caviar.

Ingredients

Scale
  • 1 sugar cube
  • 1 dash angostura bitters
  • 1/2 oz champagne cognac
  • 41/2 oz brut champagne, sparkling white wine or prosecco
  • 1 stemmed cherry – garnish

Instructions

  1. Place the sugar cube in a coupe glass
  2. Dash the bitters onto the sugar cube
  3. Pour over the cognac
  4. Slowly pour the champagne over the sugar cube
  5. Garnish with a stemmed cherry
