Dulce de leche ice cream is a natural step in the long, indulgent life of this legendary South American confection. When milk and sugar are coaxed slowly into that nutty, toffee-colored splendor, it seems inevitable that someone would churn it into something cold and velvety. The result is deeper than caramel, creamier than butterscotch, and endlessly adaptable.
Few flavors are as versatile. Dulce de leche plays beautifully with tart fruits, their brightness cutting through its richness. It finds equal harmony with salty snacks where sweet and salt lean into each other with irresistible tension. It drapes luxuriously over toast, waffles, and pancakes, and melts seductively into a hot cup of coffee.
Traditionally, it slips between cake layers and fills sandwich cookies like the beloved alfajores of Argentina. It folds into delicate crêpes, but in my kitchen, I like to pair this ice cream with warm Sticky Toffee Pudding. There, hot sponge meets cold cream in a contrast that never fails to please.
And yet, for all its culinary ambition, dulce de leche ice cream needs no supporting cast. It is perfect unadorned in a bowl or scooped generously into a crisp waffle cone, where it can speak entirely for itself.
Making Dulce de Leche Ice Cream
This is, to use a popular idiom, a piece of cake. Gently simmer sweetened condensed milk until it transforms into a silky dulce de leche – get the recipe HERE.
