Blue Cheese Dressing

salad blue cheese dressing main

Blue cheese dressing is a timeless classic and my absolute favorite for any garden or house salad. Nothing compares to the sharp, tangy, lightly salty, and earthy character of a well-made aged blue cheese—sometimes mellow and creamy, sometimes bold and spicy. Those unmistakable flavors come from the blue-green veins of Penicillium mold that develop as the cheese ages, creating both its aroma and depth. Depending on the style, the cheese may be luxuriously smooth like Gorgonzola or firm and crumbly like Roquefort.

Your choice of blue cheese will ultimately define the dressing’s personality. The supporting ingredients are chosen with care to let those flavors stand front and center—enhancing and lifting them to greater heights, never overshadowing them.

So why make your own blue cheese dressing? It gives you complete control. Select a genuine cheese you love, dial in the texture from silky smooth to delightfully chunky, and fine-tune the flavor to your taste. It comes together in about twenty minutes, costs less than store-bought, and delivers far better results. Why settle for second best? Make your own.
